Description

I love preparing these straw and hay tagliatelle! The combination of colors and flavors is simply delicious. The crispy smoked bacon goes perfectly with the creaminess of the fresh cream, creating a rich and satisfying dish. Perfect for a family dinner or a Sunday lunch, these tagliatelle are ready in less than 30 minutes. A true comfort food that warms the heart, ideal to enjoy on autumn evenings. If you prefer, you can add a pinch of grated parmesan for an extra touch of flavor.

Ingredients (6 ingredients)

  • 320 g straw and hay tagliatelle
  • 150 g cubed smoked bacon
  • 200 g fresh cream
  • 40 g butter
  • rosemary
  • fine salt

Preparation (6 steps)

Rosemary flavored butter

Thermomix® Setting
3 min/140°F/Speed 2 60

Insert 40 g of butter and a sprig of rosemary into the bowl. Melt for 3 Min./60°C/Stufe 2.

Brown the bacon

Thermomix® Setting
5 min/248°F/Speed 1 120

Add 150 g of cubed smoked bacon to the bowl and brown for 5 Min./120°C/Stufe 1.

Cooking the pasta

Bring the water for the pasta to a boil in a pot, salt it and cook 320 g of straw and hay tagliatelle according to the instructions on the package.

Creamy sauce

Thermomix® Setting
2 min/194°F/Speed 1/Linkslauf 90 Reverse

Remove the rosemary from the bowl. Add 200 g of fresh cream and mix for 2 Min./90°C/Stufe 1/Linkslauf.

Blend the pasta

Thermomix® Setting
1 min/Speed 1/Linkslauf Reverse

Drain the tagliatelle and pour them into the bowl with the sauce. Mix gently for 1 Min./Stufe 1/Linkslauf to blend the seasoning.

Serve

Plate and serve the straw and hay tagliatelle hot immediately. Add fine salt to taste as needed.
