Description

These apricot dumplings are a poem! I especially like to make them in the summer when the apricots are nice and ripe. The combination of the loose potato dough, the juicy apricot with the sugar cube and the fruity raspberry coulis is simply unbeatable. The preparation is a bit more complex, but it's definitely worth it. The dumplings are a great dessert or a light main course. If you like, you can add some vanilla sauce. An absolute highlight for every apricot lover!

Ingredients (12 ingredients)

  • 500 g floury potatoes
  • 50 g Flour
  • Flour
  • 2 tbsp Durum wheat semolina
  • 1 tbsp Butter
  • 1 piece Egg yolk
  • Salt
  • 500 g small ripe apricots
  • 10 piece Sugar cubes
  • 250 g Raspberries
  • Icing sugar
  • 6 tbsp chopped almonds

Preparation (9 steps)

Cook potatoes

Thermomix® Setting
20 min/212°F/Speed 1 100

Put 500 g floury potatoes into the mixing bowl and cover with water. Cook for 20 min./100°C/speed 1.

Prepare potato dough

Pour off the cooked potatoes, quench, peel and put hot into the mixing bowl. Add 50 g flour, 2 tbsp durum wheat semolina, 1 tbsp butter, 1 egg yolk and 0.5 tsp salt. Knead into a dough for 2 min./speed 4. Transfer the dough and let it rest for about 20 minutes.

Prepare apricots

Wash 500 g small ripe apricots. Cut 10 apricots on the side, pit them and fill with 1 piece of sugar cube each. Halve and pit the remaining apricots.

Make apricot puree

Thermomix® Setting
30 sec/Speed 8

Put the halved, pitted apricots into the mixing bowl and puree for 30 sec./speed 8. Transfer the apricot puree and chill.

Make raspberry puree

Thermomix® Setting
30 sec/Speed 8

Pick over 250 g raspberries, rinse and put into the mixing bowl. Puree for 30 sec./speed 8. If necessary, strain the raspberry puree through a sieve. Season with 3-4 tbsp icing sugar and chill.

Shape dumplings

Form the potato dough into a roll on a little flour and cut into 10 equal pieces. Press these down a little, top with 1 apricot each (with sugar cube) and form into dumplings.

Cook dumplings

15 min/212°F/Gentle stir speed 100

Put plenty of salted water into the mixing bowl and bring to the boil. Carefully add the dumplings and let them steep for 15 min./100°C/gentle stir setting.

Roast almonds

Thermomix® Setting
3 min/248°F/Speed 1 120

Roast 6-8 tbsp chopped almonds in a pan without fat until golden brown. Alternatively: Put almonds in the mixing bowl and roast for 3 min./120°C/speed 1.

Serve dumplings

Remove the dumplings from the mixing bowl with a slotted spoon and toss in the roasted almonds. Arrange with some raspberry and apricot puree. Serve the remaining puree separately.
