Description

This Thermomix® recipe for asparagus with salmon and hollandaise sauce is a gluten-free main course with fresh, white asparagus and tender salmon fillets. The homemade hollandaise sauce perfectly rounds off the dish. Prepared in 45 minutes, the recipe yields 4 servings and is ideal for a healthy, festive meal in the spring.   • 1000 g white asparagus
  • 0.5 TL Sugar
  • 4 Stück Salmon fillets
  • 2 EL Sunflower oil
  • 1 TL Salt
  • nach Geschmack Pepper
  • 3 Stück Egg yolk
  • 250 g Butter - melted
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 1 EL Lemon juice
  • 0.5 TL Mustard
  • 1000 ml Water

Preparation (7 steps)

Prepare asparagus

Peel 1 kg white asparagus and cut off the ends. Set the peeled asparagus aside.

Cook asparagus

Thermomix® Setting
12 min/212°F/Speed 1 100

Put 1000 ml water into the mixing bowl and bring to a boil for 5 min./100°C/speed 1. Add 1/2 tsp sugar and 1 tsp salt. Put the prepared asparagus into the steamer basket and insert it. Cook for 12 min./100°C/speed 1.

Prepare salmon

Season 4 salmon fillets with salt and pepper. Set the seasoned salmon fillets aside.

Fry salmon

Heat 2 tbsp sunflower oil in a pan and fry the salmon fillets over medium heat until cooked through. Set the fried salmon fillets aside.

Prepare hollandaise sauce

Thermomix® Setting
20 sec/Speed 4

Put 3 egg yolks into the mixing bowl and mix for 20 sec./speed 4. Slowly pour 250 g melted butter into the mixing bowl while the blade is running (speed 3). Make sure the butter is not too hot.

Season hollandaise sauce

Thermomix® Setting
10 sec/Speed 3

Add 1 tbsp lemon juice, 1/2 tsp mustard, salt and pepper to the hollandaise sauce in the mixing bowl and mix for 10 sec./speed 3. Transfer the hollandaise sauce and keep warm.

Serve

Remove the asparagus from the steamer basket and serve together with the fried salmon and hollandaise sauce.
