Description

These lemon cookies from the Thermomix® are a simple and festive pastry with lemon, butter, sugar and flour. Preparation takes about 120 minutes, of which 30 minutes are active working time, and yields approximately 60 cookies. Ideal as a Christmas finger food or dessert. The recipe is especially suitable for those who enjoy baking and love the fresh taste of lemon.

Ingredients (10 ingredients)

  • 250 g Sugar
  • 1 piece Lemon (untreated, zest)
  • 250 g soft Butter
  • 1 piece Egg
  • 1 pinch Salt
  • 500 g Flour
  • 1 Pck. Baking powder
  • 200 g Icing sugar
  • 3 tbsp Lemon juice
  • Sugar sprinkles (optional)

Preparation (8 steps)

Mix sugar and lemon zest

Put sugar and lemon zest into the mixing bowl and mix for 10 sec./speed 10.

Add butter, egg and salt

Add soft butter in pieces, egg and salt and stir for 30 sec./speed 4.

Mix and add flour and baking powder

Thermomix® Setting

Mix flour and baking powder, add to the mixing bowl and process for 2 min./kneading stage to a smooth dough.

Cool dough

Wrap the dough in cling film and chill in the refrigerator for at least 30 minutes.

Cut out cookies

Preheat the oven to 180 °C top/bottom heat. Roll out the dough on a floured work surface to about 3 mm thick and cut out cookies with cookie cutters. Place the cookies on a baking sheet lined with baking paper.

Bake cookies

Bake the cookies in the preheated oven for approx. 8–10 minutes until golden brown. Then let cool on a wire rack.

Mix lemon juice and icing sugar

For the icing, put icing sugar and lemon juice into the mixing bowl and stir for 20 sec./speed 3.

Decorate cookies with icing

Spread the cooled cookies with the icing and decorate with sugar sprinkles as desired. Let the icing dry.
