Description

Vegan double-decker cookies from the Thermomix® are a delicious pastry with wheat flour, margarine, sugar and oat drink. The preparation takes about 60 minutes and yields 40 servings. Ideal as vegan finger food or dessert, especially suitable for Christmas time. The recipe is easy to implement and perfect for anyone who wants to bake vegan cookies.

Ingredients (8 ingredients)

  • 250 g Wheat flour type 405
  • 125 g Margarine
  • 75 g Granulated sugar
  • 5 EL Oat drink
  • 1 Pck. Vanilla sugar
  • 1 TL Baking powder
  • 1 Prise(n) Salt
  • 2 EL Baking cocoa

Preparation (8 steps)

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Put 250 g wheat flour type 405, 125 g margarine, 75 g granulated sugar, 4 tbsp oat drink, 1 packet vanilla sugar, 1 tsp baking powder and 1 pinch of salt into the mixing bowl and knead for 2 min./kneading level to a smooth dough.

Divide dough and add cocoa

30 sec/Speed 3

Halve the dough. Put one half of the dough in a separate bowl. Add 2 tbsp baking cocoa and 1 tbsp oat drink to the other half of the dough in the mixing bowl and mix for 30 sec./level 3 until a smooth chocolate dough is formed.

Chill dough

Wrap both balls of dough in cling film and chill in the refrigerator for approx. 30 minutes.

Preheat oven

Preheat the oven to 180 degrees top/bottom heat.

Roll out dough

Roll out both doughs between two layers of baking paper to form two rectangles approx. 0.2 - 0.3 cm thick. Place the rectangles on top of each other and press down lightly.

Roll up dough and chill

Roll the dough into a large roll and chill well.

Cut biscuits

Cut the roll into approx. 1 cm thick slices with a sharp knife.

Bake biscuits

Spread the biscuits on a baking sheet lined with baking paper and bake in the preheated oven for approx. 10 minutes. Remove and let cool.
