Description

This year, bring a touch of magic to the table with homemade coal candies! I remember when I was a child, the Epiphany was synonymous with sweet coal, a little sweet joke that I loved. With this recipe, I wanted to recreate that joy, making it even more special. The preparation is a bit laborious, but the result is surprising: a sweet that is crunchy on the outside and soft on the inside, with that characteristic black color that is so much fun. Perfect for giving as a gift or enjoying during the Christmas holidays, these coal candies are an original and tasty idea. Prepare them with your Thermomix® and amaze everyone!

Ingredients (8 ingredients)

  • 300 g icing sugar
  • 20 ml vodka
  • 1 piece egg whites
  • 4 ml lemon juice
  • 12 g black food coloring
  • 300 g granulated sugar
  • 100 ml water
  • 6 g baking soda

Preparation of the icing

Insert the egg white at room temperature into the bowl. Add 4 ml of lemon juice. Whip with the butterfly inserted for 3 Min./Stufe 3.5 until a frothy mixture is obtained.

Addition of icing sugar

Remove the butterfly. Gradually add 300 g of icing sugar into the bowl and mix for 2 Min./Stufe 3.

Flavoring and coloring of the icing

Add 20 ml of vodka (or food grade alcohol) and mix for 30 Sek./Stufe 2. Add 12 g of black food coloring and mix for 1 Min./Stufe 3, making sure to obtain a homogeneous color. Transfer the icing to a bowl and set aside.

Preparation of the sugar syrup

Clean the bowl. Pour 100 ml of water and 300 g of granulated sugar into the bowl. Add 6 g of baking soda and 12 g of black food coloring. Cook for 15 Min./143°C/Stufe 2 without the measuring cup.

Joining the icing to the syrup

As soon as the syrup reaches the temperature, add 2-3 tablespoons of icing into the bowl and mix for 10 Sek./Stufe 2.

Inflation and drying

Immediately pour the mixture onto a baking sheet lined with baking paper. Leave to dry for about 30-40 minutes.

Cutting and packaging

Cut the sweet coal into pieces with a knife or by hand. Package as desired and serve.
