Description

These brave potatoes in dice are an original and fun way to enjoy this Spanish classic. Crispy on the outside and tender on the inside, they are perfect to share as an appetizer on any occasion. The key is to cut the potatoes into small cubes and fry them until they are golden and crispy. Served with a homemade brava sauce or an aioli, they are irresistible! I prepare them often for my friends and they are always a success. In addition, they are very easy to make and can be prepared in advance.

Ingredients (5 ingredients)

  • 4 piece potatoes
  • 400 mililitros olive oil
  • 1 pinch salt
  • 2 clove garlic
  • 2 tbsp brava sauce

Preparation (4 steps)

Potato preparation

Wash the 4 potatoes well and cut them into thin slices, without peeling. Put 3 or 4 slices together and cut them into a grid or rectangle to form small dice. Add a pinch of salt on top.

Flavor the oil

Thermomix® Setting

Pour the 400 ml of olive oil into the Thermomix glass. Add the 2 peeled garlic cloves. Program 5 Min./Varoma/Stufe 1. Remove the browned garlic and discard.

Fry the potatoes

Thermomix® Setting
15 min/Varoma/Speed 1/Linkslauf Varoma Reverse

With the hot oil in the glass, add the potato dice. Program 15 Min./Varoma/Stufe 1/Linkslauf. Make sure the potatoes brown evenly. If necessary, increase the time by a few minutes.

Drain and serve

Drain the fried potatoes on a plate with absorbent paper to remove excess oil. Serve immediately with 2 tablespoons of brava sauce.
