30 g Butter

30 g Wheat flour Type 405

1 EL Tomato paste

400 g Stock (e.g. beef stock)

30 g Soy sauce

1 Stück Bay leaf
-
1 Prise Salt

1 Prise Pepper
Preparation (4 steps)
Chop and sauté onion and garlic
Place the halved onion and garlic clove in the mixing bowl and chop for 5 sec/speed 5. Scrape down the sides with the spatula. Add butter and sauté for 3 min/120°C/speed 1.
Add flour and tomato paste and sauté
Add wheat flour Type 405 and tomato paste and continue to sauté for 3 min/100°C/speed 2.
Cook the sauce
Add stock (e.g. beef stock), soy sauce, bay leaf, salt and pepper and cook for 6 min/100°C/speed 3 without the measuring cup, placing the splash guard on top.
Finish the sauce
Remove the bay leaf. Insert the measuring cup and froth the sauce for 10 sec/speed 8. Season to taste and serve.
