Description

This cheese flan is a creamy and delicious dessert, perfect for any special occasion. The combination of cottage cheese with evaporated milk gives it a smooth texture and a delicate flavour that everyone will love. It is ideal to prepare in advance, as it needs a few hours of refrigeration to set well. I often make it for the Christmas holidays and it is always a success. Also, it is a gluten-free option, which makes it suitable for people with intolerance. Go ahead and try this recipe, I assure you that you will not regret it! You can serve it with a little whipped cream or fresh fruit to give it an extra touch.

Ingredients (7 ingredients)

  • 310 gramos Cottage cheese
  • 340 mililitros Evaporated milk
  • 100 mililitros Milk
  • 180 gramos Sugar
  • 3 piece Whole eggs
  • 3 piece Egg yolks
  • 120 gramos White sugar

Caramel preparation

Thermomix® Setting
8 min/Varoma/Speed 1 Varoma

Place 120 g of white sugar in the bowl. Moisten lightly with a few drops of water. Cook 8 Min./Varoma/Stufe 1, without the measuring cup, until a light caramel is obtained. Pour the caramel into a flan tin, spreading it carefully over the entire bottom and sides.

Mixing the flan ingredients

Thermomix® Setting
30 sec/Speed 4

Add 310 g of crumbled cottage cheese, 340 ml of evaporated milk, 100 ml of milk, 180 g of sugar, 3 whole eggs and 3 egg yolks to the bowl. Mix 30 Sek./Stufe 4 until a homogeneous and fine mixture is obtained.

Refrigerating the mixture

Pour the mixture into the caramelised flan tin and set aside in the fridge for 30 minutes.

Baking in a water bath

Thermomix® Setting
60 min/Varoma/Speed 1 Varoma

Place the flan tin inside a larger pot. Pour hot water into the pot until it covers 3/4 of the flan tin. Cover the flan tin with its lid or with aluminium foil. Steam 60 Min./Varoma/Stufe 1. Check for doneness with a toothpick. If it comes out clean, remove from heat.

Cooling and refrigeration

Let the flan rest at room temperature until it cools. Then, remove the flan tin from the pot and refrigerate for about 4 hours or until the next day.

Unmolding and serving

To unmold the flan, run a knife around the edges of the flan tin. Place a flat plate on top of the flan tin and carefully turn it over. Serve cold.
