Description

This cauliflower curry with shrimp is a delicious and light main course that is ready in about 35 minutes. The cauliflower is cooked together with aromatic spices and coconut milk to create a creamy curry. The shrimp are fried separately and added at the end. Ideal for those looking for a healthy and high-protein meal.

Ingredients (15 ingredients)

  • 500 g Cauliflower
  • 250 g Shrimp
  • 1 Stück Onion
  • 1 Zehe Garlic
  • 1 Stange Leek
  • 1 Stange Celery stalk
  • 1 Stück Carrot
  • 400 ml Coconut milk
  • 100 ml Vegetable stock
  • 2 EL Curry paste
  • 1 TL Curry powder
  • 0.5 TL Turmeric
  • 2 EL Oil
  • Salt
  • Pepper

Preparation (8 steps)

Chop onion and garlic

Peel and quarter 1 onion, place in the mixing bowl and chop for 3 sec./speed 5. Add 1 clove of garlic and chop for 3 sec./speed 7.

Sauté onion and garlic

Add 2 tbsp oil to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add and chop vegetables

Add 1 leek, cut into rings, 1 stalk of celery, cut into slices, and 1 carrot, cut into slices, to the mixing bowl and chop for 5 sec./speed 4.

Add curry paste and cauliflower

Add 2 tbsp curry paste and 500 g cauliflower florets to the mixing bowl and chop for 5 sec./speed 4.

Cook curry

20 min/212°F/Speed 1 212°F Reverse

Add 400 ml coconut milk, 100 ml vegetable stock, 1 tsp curry powder, 1/2 tsp turmeric, salt and pepper to taste to the mixing bowl and cook for 20 min./100°C/speed 1 reverse blade.

Fry shrimp

Fry 250 g shrimp in a separate pan with some oil until cooked.

Add shrimp to curry

Add the fried shrimp to the curry in the mixing bowl and heat for 5 min./90°C/speed 1 reverse blade.

Season the cauliflower curry with shrimp with salt and pepper and serve.
