Description

This red cabbage with apple note, prepared in the Thermomix®, is a hearty and vegetarian vegetable side dish with red cabbage, onions and redcurrant jelly. Preparation takes a total of 55 minutes, including 25 minutes of active work, and yields 6 servings. Ideal as a festive side dish, especially in winter or at Christmas. The recipe is ideal as a complement to a main course or as part of a vegetarian menu.

  • 750 g Red Cabbage
  • 2 Stück Onions
  • 1 EL Butter
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • nach Geschmack Sweet paprika powder
  • 3 EL Redcurrant jelly
  • 1 Stück Bay leaf
  • 3 Stück Juniper berries (whole)
  • 500 ml Vegetable stock
  • 2 Stück Apples
  • 1 TL Fine cornstarch
  • 2 EL Apple vinegar

Prepare red cabbage

Clean the red cabbage, quarter it and cut out the stalk. Cut quarters crosswise into fine strips. Set aside.

Chop onions

Put 2 onions in the mixing bowl and chop for 3 sec./speed 5. If necessary, push down with the spatula.

Sauté onions

Add 1 tbsp butter to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Sauté red cabbage

5 min/248°F/Speed 1 120

Add the prepared red cabbage to the onions in the mixing bowl and sauté for 5 min./120°C/speed 1. Season with salt, pepper and sweet paprika powder.

Simmer

20 min/212°F/Linkslauf Speed 1 100 Reverse

Add 3 tbsp redcurrant jelly, 1 bay leaf, 3 juniper berries (whole) and 500 ml vegetable stock and simmer for 20 min./100°C/reverse rotation speed 1.

Prepare and add apples

10 min/212°F/Linkslauf Speed 1 100 Reverse

Peel, core and dice 2 apples and add to the red cabbage in the mixing bowl. Continue cooking for 10 min./100°C/reverse rotation speed 1.

Thicken and season

2 min/212°F/Linkslauf Speed 2 100 Reverse

Mix 1 tsp cornstarch with 2 tbsp apple vinegar, add to the mixing bowl and stir in for 2 min./100°C/reverse rotation speed 2 and bring to a boil.
