Description

This vegan chili sin Carne is a hearty and filling dish that is perfect for cold days. With kidney beans, corn, peppers and a spicy tomato sauce, it is rich in flavors and nutrients. Preparation in the Thermomix® takes about 50 minutes and yields 4 servings. Ideal for a quick lunch or dinner.

Ingredients (19 ingredients)

  • 2 EL Olive oil
  • 2 Stück Onions
  • 2 Zehen Garlic
  • 1 Stück red pepper
  • 1 Stück yellow pepper
  • 2 Stangen Celery stalks
  • 400 g chopped tomatoes
  • 400 g Kidney beans (drained weight)
  • 150 g Corn (drained weight)
  • 2 EL Tomato paste
  • 250 ml Vegetable broth
  • 1 TL smoked paprika powder
  • 1 TL Cumin
  • 0.5 TL Chili powder
  • 1 TL Mustard
  • Salt
  • Pepper
  • fresh parsley (optional)
  • 1 Stück Chili pepper (optional)

Preparation (5 steps)

Prepare onions, garlic and chili

Thermomix® Setting
3 sec/Speed 5, 3 sec/Speed 7

Place 2 onions (approx. 250g) in the mixing bowl and chop for 3 sec./speed 5. Add 2 cloves of garlic and chop for 3 sec./speed 7. If necessary, use the spatula to push down from the edge.

Sauté onions, garlic and chili

Add 2 tbsp olive oil to the mixing bowl and sauté for 3 min./120°C/speed 1.

Add and chop vegetables

Place 1 red pepper (approx. 150g), 1 yellow pepper (approx. 150g) and 2 sticks of celery (approx. 100g) in coarse pieces in the mixing bowl and chop for 5 sec./speed 4. If necessary, use the spatula to push down from the edge.

Add remaining ingredients and simmer

Add 400g chopped tomatoes, 400g kidney beans (drained weight), 150g corn (drained weight), 2 tbsp tomato paste, 250 ml vegetable broth, 1 tsp smoked paprika powder, 1 tsp cumin, 1/2 tsp chili powder, 1 tsp mustard, salt and pepper to taste to the mixing bowl and simmer for 25 min./100°C/Reverse speed 1.

Season and serve

Season the Chili sin Carne with salt, pepper and possibly a little more chili powder. Garnish with fresh parsley and serve.
