  • 200 gr short pasta
  • 250 gr fresh sausages
  • 150 gr smoked pancetta
  • 3 piece ripe tomatoes
  • 3 piece eggs
  • oregano
  • 50 gr grated pecorino cheese
  • oil
  • salt

Preparation (7 steps)

Prepare the sausage and pancetta

Cut the fresh sausage into small pieces and the smoked pancetta into cubes. Place the sausage and pancetta in the Thermomix bowl. Add oregano to taste.

Sauté the sausage and pancetta

Thermomix® Setting

Add a little oil to the bowl. Program the Thermomix to sauté the sausage and pancetta for 5 Min./120°C/Stufe 1.

Add the tomato

Thermomix® Setting
10 min/212°F/Speed 1 212°F

Peel and chop the ripe tomatoes. Add them to the Thermomix bowl along with the sausage and pancetta. Program 10 Min./100°C/Stufe 1.

Cook the pasta

Meanwhile, in a separate pot, cook the short pasta in boiling water with salt and a splash of oil until al dente. Reserve some of the cooking water.

Prepare the egg and cheese sauce

In a bowl, beat the egg yolks with the grated pecorino cheese. Add a little of the pasta cooking broth and mix well.

Mix the pasta with the sauce

Thermomix® Setting
20 Seg./Speed 2/Linkslauf Reverse

Drain the pasta and add it to the Thermomix bowl with the sausage and pancetta sauce. Pour the egg and cheese mixture over the pasta. Mix gently for 20 Seg./Stufe 2/Linkslauf.

Taste and rectify salt if necessary. Serve immediately.
