Description

These crispy chicken pieces are an absolute hit for young and old! I like to make them when things need to be quick and yet something special should be on the table. The combination of cornflakes and tortilla chips provides an irresistible crust. A fresh salad and a delicious dip go well with it. The preparation is super easy and guaranteed to succeed. Try it, you will be thrilled! Also ideal as finger food for the next party.

Ingredients (11 ingredients)

  • 800 g Chicken breast fillet
  • 100 g Unsweetened cornflakes
  • 100 g Tortilla chips
  • 80 g Wheat flour (Type 405)
  • 2 piece Eggs (Size M)
  • 2 tbsp Milk
  • to taste Salt
  • to taste Pepper
  • 1 pinch Paprika powder (sweet)
  • 1 pinch Cayenne pepper
  • 5 tbsp Sunflower oil

Preparation (4 steps)

Chop cornflakes and tortilla chips

Thermomix® Setting

Place 100 g unsweetened cornflakes and 100 g tortilla chips in the mixing bowl and chop for 10 sec./speed 6. Then transfer.

Prepare breading

Place 80 g wheat flour (Type 405) on a plate. In a deep plate, whisk 2 eggs (size M) with 2 tablespoons of milk, salt and pepper. Mix the chopped cornflakes and tortilla chips with 1 pinch of paprika powder (sweet) and 1 pinch of cayenne pepper.

Bread the chicken

Cut 800 g chicken breast fillet into pieces of any size. First turn the chicken pieces in the flour, then pull through the egg mixture and finally turn in the breadcrumbs.

Fry the chicken

Heat 5 tablespoons of sunflower oil in a pan and fry the breaded chicken pieces in it until they are crispy on the outside and tender and cooked on the inside. Remove from the pan and drain on kitchen paper.
