Description

These freezer-friendly mini pizzas are perfect for a quick and easy meal or snack. I've been making these for years, and they're always a hit with kids and adults alike. The best part is that you can make a big batch and freeze them for later. Just grab one or two whenever you need a quick bite. They're great for parties, after-school snacks, or even a light dinner. Feel free to get creative with the toppings – use whatever you have on hand! The dough is easy to make, and the whole process is pretty straightforward. Enjoy!

Ingredients (6 ingredients)

  • 500 g bread dough
  • 6 tbsp tomato pasta sauce or passata
  • 1 small bunch basil leaves
  • 18 piece cherry tomatoes
  • 250 g mozzarella
  • 25 g parmesan

Preparation (8 steps)

Prepare the dough

Prepare the bread dough according to the package instructions. Once prepared, transfer the dough to an oiled bowl and let it rise for approximately 1 hour.

Knead the dough

Place the risen dough into the Thermomix bowl and knead for 2 Min./Knetstufe.

Divide and roll the dough

Remove the dough from the Thermomix bowl. Divide the dough into 6 equal portions. On a lightly floured surface, roll each portion into a circle approximately 18cm in diameter. Keep the dough you are not using covered with a damp tea towel or oiled cling film to prevent it from drying out.

Prepare the pizza bases

Place the pizza bases on large oiled baking sheets (you may need 2 or 3). Spread 1 tbsp of tomato pasta sauce or passata on each base.

Chop basil

Place the small bunch of basil leaves into the Thermomix bowl and chop for 3 Sec./Stufe 5.

Add toppings

Scatter the chopped basil, 18 cherry tomatoes (halved), 250g mozzarella (sliced), and 25g Parmesan (grated) on each pizza base.

Freeze or bake

You can freeze the pizzas now on the baking sheet, wrapped in cling film. Or if eating straight away, heat oven to 240C/220C fan/gas 9. Cook for 8-12 mins, until crisp and golden. To cook from frozen, remove the cling film and heat oven to 220C/200C fan/gas 7. Bake for 10-14 mins until crisp and golden.

Freeze the pizzas

Don’t wrap the pizzas and trays with cling film, open freeze instead. As soon as the pizzas are frozen solid, lift them off the trays and stack, using sheets of greaseproof paper or baking parchment in between. Then wrap the whole stack in cling film, or put in a large freezer bag – perfect if you’ll be grabbing just one or two at a time.
