Description

This Speculoos mousse is a delicious dessert for the winter season. With white and milk chocolate, Speculoos cookies, and Christmas spices, it's a festive treat. Preparation takes about 30 minutes, plus an hour of chilling time. The recipe is suitable for 4 servings and is ideal for Christmas or other festive occasions.

Ingredients (8 ingredients)

  • 50 g white chocolate
  • 150 g milk chocolate
  • 20 g sugar
  • 5 Stück egg yolks
  • 200 g whipping cream
  • 70 g Speculoos cookies
  • 0.5 TL Speculoos spice
  • 0.5 TL cinnamon

Preparation (8 steps)

Melt white chocolate

Place 50 g white chocolate in the mixing bowl and chop for 10 sec/speed 8. Then melt for 3 min/50°C/speed 2.

Melt milk chocolate

Place 150 g milk chocolate in the mixing bowl and chop for 10 sec/speed 8. Then melt for 3 min/50°C/speed 2.

Mix egg yolks and sugar

Add 20 g sugar and 5 egg yolks to the mixing bowl and mix for 2 min/speed 3.

Add melted chocolate

Add the melted white and milk chocolate and mix for 1 min/speed 3.

Whip the cream until stiff

Add 200 g cream to the mixing bowl and, with the butterfly whisk, whip until stiff for 2-3 min/speed 3.5. Watch the cream so that it doesn't turn into butter.

Add Speculoos and spices

Add 70 g Speculoos cookies, 0.5 tsp Speculoos spice and 0.5 tsp cinnamon and stir in for 30 sec/speed 3.

Fold in the cream

Carefully fold in the whipped cream.

Refrigerate

Pour the mousse into glasses or a bowl and refrigerate for at least 1 hour.
