Description

These fried cod morsels are an explosion of flavour! Perfect as a tasty appetizer or for an aperitif with friends. The light and crispy batter encloses a heart of flavorful cod, enriched by the freshness of marjoram. The preparation is simple and quick, ideal for those who have little time but do not want to give up taste. I love them accompanied by a yogurt and chives sauce, but they also go well with homemade mayonnaise. An original idea to enjoy cod in a different way than usual!

Ingredients (11 ingredients)

  • 400 g desalted and deboned cod
  • 100 g 00 flour
  • 50 g rice flour
  • 2 g instant yeast for savory pies
  • 200 ml iced water
  • 2 rametti fresh marjoram
  • 1 q.b. pepper
  • 1 q.b. fine salt
  • 1 q.b. seed oil
  • 1 q.b. chives (or fresh spring onion)
  • 1 a piacere accompanying sauce

Preparation (8 steps)

Prepare the cod

Thermomix® Setting
5 sec/Speed 5

Cut desalted and deboned cod into very small cubes. Place in the mixing bowl and chop for 5 sec./speed 5. Scrape down the sides with the spatula.

Add marjoram

Thermomix® Setting
5 sec/Speed 3/Linkslauf Reverse

Add chopped marjoram to the chopped cod in the mixing bowl and mix for 5 sec./speed 3 reverse.

Mix dry ingredients

10 sec/Speed 4

Place 00 flour, rice flour and instant yeast for savory pies in the mixing bowl and mix for 10 sec./speed 4.

Prepare batter

Thermomix® Setting
20 sec/Speed 4

Slowly add iced water and mix for 20 sec./speed 4 until smooth batter is formed. Scrape down the sides with the spatula.

Incorporate cod

Thermomix® Setting
10 sec/Speed 3/Linkslauf Reverse

Add the chopped cod from step 2, salt and pepper to the mixing bowl and mix for 10 sec./speed 3 reverse.

Let the batter rest

Transfer the batter to a bowl, cover with plastic wrap and let rest for 10 minutes.

Frying

Heat abundant seed oil in a pot until it reaches 170-180°C. Using a spoon, take portions of the batter and place them in the hot oil. Fry for approximately 10 minutes, until golden brown and crispy.

Drain and Serve

Drain the fried Cod Morsels on paper towels to remove excess oil. Garnish with chopped herbs (chives or fresh spring onion) and serve with a sauce of your choice.
