Description
This elderflower liqueur is an aromatic drink, perfect for summer. Made with fresh elderberries, lemon and a touch of vanilla, it is a treat for special occasions. Preparation takes about 90 minutes and yields a larger quantity, ideal for gifting or for sociable gatherings.
Ingredients (6 ingredients)

1.25 kg Elderberries

1 Flasche 54% Rum
Preparation (7 steps)
Prepare elderberries
Pick 1 1/4 kg elderberries from the stems (using a fork).
Prepare lemon
Slice 1 lemon with the Wundermix WunderSlicer V2. Place the WunderSlicer V2 on the mixing bowl lid and select the desired slice (fine or coarse). The lemon slices can fall directly into the mixing bowl or be collected in a container.
Prepare vanilla
Scrape out 1 vanilla bean.
Cooking
Place the picked elderberries, lemon slices, scraped vanilla, 2 l water in the mixing bowl and cook for 30 min./100°C/speed 1.
Strain
Strain the mixture through a sieve and collect the juice.
Cook sugar syrup
Place the obtained juice and 1/2 kg sugar in the mixing bowl and cook for 3-4 min./100°C/speed 2.
Cool and Mix
Let the liqueur cool, then add 1 bottle of 54% rum and mix well.
