Description
These vegetable muffins from the Thermomix® are a delicious finger food with potatoes, zucchini, carrots, eggs and cheese. The preparation takes about 40 minutes and yields 4 servings. The recipe is vegetarian and is suitable as a snack, appetizer or light main course. Ideal for parties or as a simple meal for the whole family.
Ingredients (10 ingredients)

300 g Potatoes

1 Stück Zucchini

2 Stück Carrots

4 Stück Eggs
-
3 EL grated Cheese
-
3 EL Milk
-
4 EL Wholemeal flour

1 EL chopped Parsley frozen

Salt
-
Pepper
Preparation (3 steps)
Chop potatoes, zucchini and carrots
Cut potatoes, zucchini and carrots into coarse pieces and place in the mixing bowl. Chop for 5 sec./speed 5.
Mix vegetables with remaining ingredients
Add chopped vegetables, eggs, grated cheese, milk, wholemeal flour, chopped parsley (frozen), salt and pepper to the mixing bowl. Stir for 20 sec./speed 4.
Fill muffin tins and bake
Fill the dough into muffin tins. Bake in a preheated oven at 180°C top/bottom heat for approx. 20-25 minutes.
