Description

These Citrus Bliss Cupcakes are a delightful treat, bursting with bright lemon flavor in both the cake and the frosting. Ingredients (12 ingredients)

  • 0.75 cup white sugar
  • 0.5 cup butter, softened
  • 2 piece eggs
  • 2 tsp lemon extract
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 1.5 cup all-purpose flour
  • 0.66666666666667 cup cold milk
  • 3 tbsp butter, softened
  • 2 tsp lemon extract
  • 1 tsp milk
  • 1 cup confectioners' sugar

Preheat oven and prepare muffin tin

Preheat oven to 350 degrees F (175 degrees C). Grease or line 12 muffin cups with paper liners. No Thermomix settings are needed for this step.

Cream sugar and butter

Add ¾ cup white sugar and ½ cup softened butter to the Thermomix bowl. Mix for 2 Min./Stufe 3 until smooth and creamy.

Add 2 eggs and 2 teaspoons lemon extract to the Thermomix bowl. Mix for 30 Sec./Stufe 3 until well combined.

Incorporate dry ingredients

Add ½ teaspoon baking powder and ¼ teaspoon salt to the Thermomix bowl. Mix for 10 Sec./Stufe 2 to combine. Then, add 1 ½ cups all-purpose flour and ⅔ cup cold milk. Mix for 30 Sec./Stufe 3 until just combined. Be careful not to overmix.

Fill muffin cups

Spoon batter into the prepared muffin cups, filling each about 2/3 full. No Thermomix settings are needed for this step.

Bake in the preheated oven until a toothpick inserted in the center of a cupcake comes out clean, 15 to 20 minutes. No Thermomix settings are needed for this step.

Prepare the frosting

Add confectioners' sugar

Add 1 cup confectioners' sugar to the Thermomix bowl. Mix for 30 Sec./Stufe 3, gradually increasing to Stufe 4, until desired consistency is reached. Add more confectioners' sugar or milk as needed to adjust the consistency.

Frost cupcakes

Once the cupcakes have cooled completely, spread the frosting onto the cupcakes. No Thermomix settings are needed for this step.
