Description

Festive roast beef with winter roasted vegetables is a hearty main course with roast beef, potatoes, pumpkin and Brussels sprouts, prepared in the Thermomix®. The recipe is particularly suitable for festive occasions such as Christmas and is ideal for 6 people. The preparation time is a total of 150 minutes, of which 45 minutes are active working time. This dish is perfect for anyone looking for a hearty and seasonal family meal.

Ingredients (16 ingredients)

  • 1800 g Roast beef
  • Salt
  • 10 EL Rapeseed oil
  • Pepper
  • 800 g Potatoes
  • 1 kleiner Hokkaido pumpkin
  • 400 g Parsnips
  • 400 g Brussels sprouts
  • 60 g Pecan nuts
  • 100 g Cranberries
  • 0.5 TL Coriander ground
  • 20 g Thyme
  • 20 g Rosemary
  • 120 g Breadcrumbs (possibly gluten-free)
  • 90 g Butter
  • 3 TL Mustard

Preparation (8 steps)

Prepare roast beef

Rub 1.8 kg roast beef with salt. Heat 2 tbsp rapeseed oil in a pan. Sear roast beef on the fatty side. Season with pepper and bake on a baking sheet in a preheated oven at 90 °C top/bottom heat for approx. 1.5 hours.

Prepare vegetables

Wash 800 g potatoes and cut into narrow wedges. Wash 1 small Hokkaido pumpkin, remove seeds and dice. Peel 400 g parsnips and halve lengthwise. Clean, wash and halve 400 g Brussels sprouts.

Mix and season vegetables

Mix vegetables, 60 g pecan nuts and 100 g cranberries with 5 tbsp rapeseed oil in a bowl, season with salt, pepper and 0.5 tsp coriander ground and place on one or two baking sheets.

Bake vegetables

Remove meat from oven and keep warm. Set oven to 180 °C (convection) and bake vegetables for approx. 20 minutes.

Chop herbs

Wash 20 g thyme and 20 g rosemary, shake dry and put in the mixing bowl. Chop 5 sec./speed 5.

Prepare herb crust

Add 120 g breadcrumbs, 90 g butter, 3 tbsp rapeseed oil, 3 tsp mustard, salt and pepper to the herbs in the mixing bowl and mix 20 sec./speed 3.

Apply and grill herb crust

Spread the herb mixture on the roast beef. Turn on the oven grill and grill the meat in it for approx. 4 minutes. Remove and let rest covered.

Serve

Cut roast beef into thin slices and serve with the roasted vegetables.
