Description

This orange Crème brûlée with Amarettini, prepared in the Thermomix®, is a festive dessert with an Italian touch. The main ingredients are cream, eggs, orange and Amarettini. The preparation takes a total of 225 minutes, of which 45 minutes are active work, and yields 6 servings. Ideal as a sweet ending for a family meal or a Christmas menu.

Ingredients (8 ingredients)

  • 120 g Whipping cream
  • 480 ml Milk
  • 1 Stück Organic orange (grated zest)
  • 3 Stück Eggs (size M)
  • 2 Stück Egg yolks (size M)
  • 150 g brown sugar
  • 70 g Amarettini cookies
  • 1 Stück Organic orange (for zest)

Preparation (9 steps)

Heat cream, milk and orange zest

Thermomix® Setting
8 min/194°F/Speed 2 90

Add 120 g whipping cream, 480 ml milk and the grated zest of 1 organic orange to the mixing bowl and heat for 8 min./90°C/speed 2. The mixture must not boil.

Whisk eggs, egg yolks and sugar

Put 3 eggs (size M), 2 egg yolks (size M) and 90 g brown sugar in a bowl and whisk with a hand mixer until the mixture is light and foamy. Perform this step outside of the Thermomix.

Chop Amarettini

8 sec/Speed 8

Put 70 g Amarettini cookies in the mixing bowl and chop for 8 sec./speed 8. If necessary, push down with the spatula and repeat the process.

Mix milk-cream and Amarettini

Thermomix® Setting
10 sec/Speed 3

Add the chopped Amarettini to the warm milk-cream mixture in the mixing bowl and stir for 10 sec./speed 3.

Fold the milk-cream mixture into the egg mixture

Carefully fold the milk-cream-Amarettini mixture into the egg-sugar mixture. Perform this step outside of the Thermomix.

Fill cream into molds and bake

Fill the cream into 6 ovenproof molds (à approx. 175 ml) and place on a baking tray of the oven. Pour in boiling water until the molds are about 2/3 in the water. Bake in a preheated oven (electric oven: 150 °C/ convection oven: 125 °C/ gas: see manufacturer) in a water bath for about 40 minutes until the cream has set. Remove and let cool.

Cool cream

Cover the cooled cream with plastic wrap and refrigerate for at least 2 hours.

Cut orange zest

Wash 1 organic orange, rub dry and cut zest with a zester. Perform this step outside of the Thermomix.

Caramelize Crème brûlée

Spread 10 g brown sugar each (60g in total) on the Crème brûlée and caramelize with a Crème brûlée burner. Garnish with orange zest.
