Description

These creamy chicken bites, inspired by a traditional recipe, are perfect for a gourmet appetizer or a quick meal. The smooth chicken filling, flavored with parsley and enhanced with a touch of ketchup, is coated in a crispy dough. I often prepare them for parties or evenings with friends, and they always disappear in the blink of an eye! The preparation takes a little time, but the result is really worth it. You can vary the filling by adding vegetables or spices according to your tastes. A real delight to share!

Ingredients (11 ingredients)

  • 3 piece Chicken breast(s)
  • 1 l Water
  • 1 piece Onion(s)
  • 1 bouquet(s) Parsley
  • 1 c. à café Ketchup
  • 1 pincée(s) Salt
  • 1 pincée(s) Pepper
  • 460 g Flour
  • 50 g Butter
  • 4 cube(s) Chicken stock
  • 750 ml Water

Preparation (9 steps)

Cooking the chicken

Thermomix® Setting
15 min/212°F/Speed 1 100

Put 1 liter of water in the Thermomix bowl. Add the 3 chicken breasts. Cook 15 Min./100°C/Stufe 1.

Collecting the broth and shredding the chicken

Drain the chicken and reserve the cooking broth in a container. Let the chicken cool before shredding it gently by hand.

Preparing the filling

Put the onion cut into pieces in the Thermomix bowl and chop 3 Sek./Stufe 5. Add the shredded chicken, chopped parsley, ketchup, salt and pepper. Mix 5 Sek./Stufe 4.

Preparing the dough

Thermomix® Setting
5 min/212°F/Speed 2 100

Put 750 ml of chicken cooking water, butter and 4 chicken stock cubes in the Thermomix bowl. Heat 5 Min./100°C/Stufe 2.

Cooking the dough

Add the flour all at once in the Thermomix bowl. Mix 30 Sek./Stufe 4.

Cooling the dough

Pour the ball of dough into a bowl and cover immediately with cling film, to prevent it from drying out. Then let cool at room temperature.

Shaping the coxinhas

Form balls of dough the size of a ping-pong ball, then push the thumb in to create a cavity. Fill the cavity with the chicken filling and then close the dough by pulling until you get a pear shape.

Preparing for frying

Pour the milk into a bowl and the breadcrumbs into another. Dip the chicken coxinhas, one by one, in the milk and then roll them in the breadcrumbs.

Frying the coxinhas

In a saucepan, pour the oil and heat over high heat, then fry the coxinhas until they are golden brown. Enjoy them hot!
