Description

These light baked chicken meatballs are a delicious and healthy option to enjoy at any time. Prepared with minced chicken breast, fresh herbs and a touch of milk, they are perfect for those looking for a low-calorie alternative to traditional meatballs. The recipe is very simple and quick to make with the Thermomix®, which makes it an excellent option for a weekday meal. Coriander and parsley give it a fresh and aromatic touch that complements the flavor of the chicken very well. A light and tasty main course that the whole family will love!

Ingredients (9 ingredients)

  • 500 gramos Minced chicken breast
  • 1 rama Coriander
  • 1 rama Parsley
  • 0.5 piece Spring onion
  • 1 pinch Salt
  • 1 piece Egg
  • 1 pinch Ground black pepper
  • 1 slice Wholemeal sliced bread
  • 1 chorro Semi-skimmed milk

Preparation (7 steps)

Prepare the bread

Cut the slice of wholemeal sliced bread into small pieces and place it in a bowl. Pour a splash of semi-skimmed milk over the bread until it is well soaked. Let it rest for a few minutes.

Mix egg and bread

Add the egg, a pinch of salt and a pinch of ground black pepper to the bowl with the bread soaked in milk. Mix well with a spoon until a homogeneous paste is obtained.

Chop spring onion and herbs

Place the half spring onion, the coriander sprig and the parsley sprig in the Thermomix glass. Chop for 3 seconds at speed 5.

Incorporate chopped ingredients

Pour the mixture of chopped spring onion, coriander and parsley into the bowl with the mixture of bread, egg and milk. Mix well with a spoon.

Add the meat

Add the 500 grams of minced chicken breast to the bowl with the rest of the ingredients. Season with salt and ground black pepper to taste. Mix well with your hands until all the ingredients are completely integrated. If the dough is too liquid, add a little more grated bread.

Form the meatballs

Preheat the oven to 180ºC. With the help of two soup spoons, form the meatballs and place them on a baking tray covered with baking paper.

Bake the meatballs

Bake the meatballs in the preheated oven at 180ºC for 15-18 minutes, or until they are golden brown and cooked through.
