Description

This creamy Massaman curry with chicken breast fillet, onions, ginger, carrots and potatoes is a hearty main course that is prepared in the Thermomix®. Preparation with Massaman curry paste and coconut milk takes about 60 minutes, with an active working time of 30 minutes. The recipe is designed for 4 servings and is ideal as a warm, festive family meal with rice. A delicious curry dish that easily brings Asian cuisine into everyday life.

  • 500 g Chicken breast fillet
  • 1 Onion
  • 0.5 TL Ginger
  • 200 g Carrots
  • 500 g Potatoes
  • 3 EL Rapeseed oil
  • 3 EL Massaman Curry paste
  • 800 g Coconut milk
  • 3 TL Coriander - dried
  • 2 EL Brown sugar
  • 2 EL Lime juice
  • 1 EL Worcestershire sauce
  • Salt
  • 250 g Jasmine rice
  • 50 g Peanuts
  • 1 Lime - sliced
  • Coriander - fresh

Preparation of the ingredients

Cut chicken breast fillet into small pieces. Cut onion into half rings. Chop ginger finely. Peel carrots and cut into thin slices. Peel potatoes and cut into small pieces. Prepare jasmine rice according to package directions.

Chop onions

Place onion in the mixing bowl and chop for 3 seconds/speed 5. Push down with the spatula.

Sauté onions

Add rapeseed oil to the onions in the mixing bowl and sauté for 3 minutes/120°C/speed 1.

Roast curry paste

Add Massaman curry paste to the onions in the mixing bowl and sauté for 1 minute/120°C/speed 1 while stirring.

Prepare sauce

Add half of the coconut milk, ginger, coriander, brown sugar, lime juice and Worcestershire sauce to the mixing bowl and bring to the boil for 5 minutes/100°C/speed 2.

Fry chicken

Fry the chicken breast pieces in a separate pan with some oil until they are cooked.

Add chicken

Add the fried chicken to the mixing bowl.

Add vegetables and remaining coconut milk

Add potatoes, carrots and the remaining coconut milk to the mixing bowl and simmer for 20 minutes/100°C/reverse rotation speed 1.

Season the Massaman curry with salt and add more spices if necessary.

Serve Massaman curry with jasmine rice, peanuts, fresh coriander and lime slices.
