Description

I've been making these roasted carrots and onions for years, and they're always a hit! The sweetness of the carrots and onions caramelizes beautifully in the oven, and the fresh dill adds a bright, herbaceous note.   • 16 ounce package baby carrots
  • 1 piece large onion, sliced into rings
  • 2 tablespoon olive oil
  • 0.5 tablespoon freeze-dried dill
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper

Preheat Oven

Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.

Combine Carrots and Onions

Combine 1 (16 ounce) package baby carrots and 1 large onion, sliced into rings, in a large bowl.

Prepare Seasoned Oil

In the mixing bowl, add 2 tablespoons olive oil, ½ tablespoon freeze-dried dill, ½ teaspoon salt, and ¼ teaspoon ground black pepper. Mix 10 Sec./Stufe 3 until evenly combined.

Coat Vegetables

Pour the seasoned oil over the carrots and onions in the bowl. Stir until evenly coated.

Roast Vegetables

Spread the mixture out evenly on the prepared baking sheet. Roast vegetables until soft, stirring halfway through, about for 30 minutes.
