Description

This roasted vegetables with herb yogurt is a light and healthy main course, ideal for cold winter days. The colorful vegetables are prepared with the Wundermix WunderSlicer V2 and roasted in the oven, while the refreshing herb yogurt dip is prepared in the Thermomix®. The dish is vegetarian and rich in vitamins, perfect for a balanced diet. The preparation time is about 45 minutes and serves 4.

Ingredients (11 ingredients)

  • 2 Stück Carrots
  • 1 Stück Zucchini
  • 1 Stück Red bell pepper
  • 1 Stück Sweet potato
  • 2 EL Olive oil
  • Salt
  • Pepper
  • Rosemary
  • 250 g Plain yogurt
  • 1 Bund Chives or parsley
  • 1 TL Lemon juice

Preparation (6 steps)

Prepare vegetables

Wash 2 carrots, 1 zucchini, 1 red bell pepper and 1 sweet potato and cut into coarse pieces with the Wundermix WunderSlicer V2. Place the WunderSlicer V2 on the mixing bowl lid and select the desired slice (fine/coarse). Place the sliced vegetables on a baking sheet.

Season vegetables

Add 2 tablespoons of olive oil, salt, pepper and rosemary to the vegetables and mix well.

Roast vegetables

Roast the vegetables in a preheated oven at 200°C for approx. 25 minutes.

Prepare herbs

Wash and roughly chop 1 bunch of chives or parsley.

Prepare dip

Add 250 g plain yogurt, chopped herbs and 1 tsp lemon juice to the mixing bowl and stir for 10 sec/speed 3.

Serve

Serve the roasted vegetables with the herb yogurt. Sprinkle with pumpkin seeds or walnuts as desired.
