Description

This lentil vegetable casserole is a real comfort food! The combination of lentil penne, fresh broccoli and juicy cherry tomatoes makes it a delicious and satisfying main course. I love how quick and easy it is to prepare – perfect for a relaxed weeknight evening. The casserole is vegetarian and can be prepared well in advance. If you like, you can sprinkle some grated cheese over it. An absolute must for all vegetable and casserole fans!

Ingredients (10 ingredients)

  • 250 g Penne Red Lentils
  • 1 piece Broccoli
  • 200 g Cherry tomatoes
  • 2 clove Garlic
  • 1 tbsp Rapeseed oil
  • 2 can Pizza tomatoes (à 425 ml)
  • to taste Salt
  • to taste Pepper
  • to taste Cayenne pepper
  • 125 g Mozzarella

Preparation (7 steps)

Preheat oven and cook lentil penne

Preheat the oven to 180 °C top/bottom heat. Prepare the lentil penne according to the package instructions.

Prepare vegetables

Clean and wash the broccoli and cut into small florets. Peel and chop the stalk. Wash and halve the tomatoes. Peel the garlic.

Chop garlic

Put 2 cloves of garlic in the mixing bowl and chop for 3 sec./speed 7.

Blanch broccoli

Briefly blanch the broccoli in boiling water, drain.

Sauté garlic and broccoli

Put 1 tbsp rapeseed oil in the mixing bowl, add garlic and broccoli and sauté for 3 min./120°C/speed 1.

Add pizza tomatoes and cherry tomatoes

Add 2 cans of pizza tomatoes (à 425 ml) and the halved cherry tomatoes. Season with salt, pepper and cayenne pepper and simmer for 5 min./100°C/speed 1.

Layer and bake casserole

Spread the drained pasta together with the vegetables in a casserole dish. Tear the mozzarella into pieces, spread on the casserole and bake in the oven for approx. 15-20 minutes until the cheese has melted.
