Description

These apricot dumplings made from potato dough are a traditional dish that can be enjoyed as a main course or as a dessert. Filled with fresh apricots and rolled in breadcrumbs, they are a delicious treat. Preparation takes about 90 minutes and yields 15 servings. Ideal for lovers of sweet dumplings.

Ingredients (13 ingredients)

  • 1000 g floury potatoes, freshly steamed or from the day before
  • 400 g whole wheat flour
  • 1 Stück Egg
  • nach Geschmack Vanilla
  • nach Geschmack Cinnamon
  • nach Geschmack Lemon zest
  • 1 Prise Salt
  • 1 EL Sugar
  • 15 Stück small apricots
  • 8 Stück lump sugar
  • 100 g Breadcrumbs
  • 30 g Sugar
  • nach Geschmack Cinnamon

Preparation (7 steps)

Prepare potatoes

Place 1 kg floury potatoes, freshly steamed or from the day before, in the mixing bowl and chop with the Meistermix Patix dough blade for 20 sec/speed 4.

Prepare potato dough

Add 400 g whole wheat flour, 1 egg, vanilla, cinnamon, lemon zest, 1 pinch of salt and 1 tbsp sugar (15 g) to the potatoes in the mixing bowl and knead with the Meistermix Patix dough blade for 2 min/knead stage to form a smooth dough.

Let the dough rest

Let the dough rest, uncovered, at room temperature for 10 minutes.

Fill apricots

Remove the pits from the 15 small apricots (approx. 1 kg) with the handle of a wooden spoon and fill the apricot with 8 pieces of halved lump sugar (approx. 30 g) or a squirt of sweetener.

Shape dumplings

Form the dough into a roll about 5 cm thick. Cut off 15 pieces. Flatten each piece one after the other in your hand, place an apricot on top and cover with the dough.

Cook dumplings

Bring salted water to a boil (1 level teaspoon of salt to 1 liter of water). Cook the dumplings in it as described in the "Little Dumpling ABC", see page 181 ff.

Prepare breadcrumbs and roll dumplings

Prepare 100 g breadcrumbs (see page 203). Roll the dumplings in the breadcrumbs and sprinkle with approx. 30 g sugar and cinnamon.
