Description

These spinach dumplings with Alpine cheese are a hearty and vegetarian dish that is ideal as a starter or main course. Preparation takes about 40 minutes and yields 8 servings. The dumplings are served with grated Alpine cheese, brown butter and baby spinach. A hearty dish for cold days.

Ingredients (15 ingredients)

  • 150 g firm white bread or dumpling bread
  • 60 g Onions
  • 1 Stück Clove of garlic
  • 2 EL Butter
  • 200 g Leaf spinach, cooked
  • 2 Stück Eggs
  • 50 ml Milk
  • 30 g Alpine cheese, diced
  • 1 EL Flour
  • 1 Msp. Nutmeg
  • Salt
  • Pepper from the mill
  • 20 g Alpine cheese, grated
  • 30 g brown butter
  • 20 g Baby spinach

Preparation (8 steps)

Prepare white bread

Cut 150 g of firm white bread into cubes and set aside.

Sauté onions and garlic

Peel 60 g onions and 1 clove of garlic, chop finely and place in the mixing bowl. Chop for 3 sec./speed 5. Add 2 tbsp butter and sauté for 3 min./120°C/speed 1.

Puree spinach and eggs

Add 200 g cooked leaf spinach and 2 eggs to the mixing bowl and puree for 30 sec./speed 8.

Prepare dough

20 sec/Speed 4

Add the sautéed onions and garlic, 50 ml milk, 30 g Alpine cheese cut into cubes, 1 tbsp flour, 1 pinch of nutmeg, salt and pepper to the white bread in the mixing bowl and mix for 20 sec./speed 4.

Let dough rest

Let the mixture rest, covered, for about 15 minutes.

Form dumplings

Form dumplings from the mixture with wet hands.

Cook dumplings

Bring plenty of salted water to a boil and let the dumplings simmer in it for about 15 minutes.

Serve

Distribute the spinach dumplings on plates and serve garnished with grated Alpine cheese, 30 g brown butter and 20 g baby spinach.
