Description

These chicken and potato meatballs are real comfort food! I often prepare them for my children, and they disappear in the blink of an eye. The combination of tender chicken and creamy potatoes, enriched with parmesan, makes them irresistible. They are perfect as a main course, accompanied by a fresh salad, or as a delicious finger food for a party. The preparation is simple and quick, especially with the help of our beloved Thermomix®. A tip? Prepare plenty, because one leads to another! Also ideal to freeze for a quick dinner.

Ingredients (9 ingredients)

  • 500 g Chicken breast
  • 500 g Potatoes
  • 1 piece Eggs
  • 30 g Parmigiano Reggiano
  • 50 g Breadcrumbs
  • 1 q.b. Seed oil
  • 1 q.b. Salt
  • 1 q.b. Pepper
  • 1 q.b. Flour

Preparation (8 steps)

Chicken preparation

Thermomix® Setting
10 sec/Speed 7

Divide the chicken breast and cut it into cubes. Put the chicken cubes into the Thermomix bowl and chop for 10 Sec./Stufe 7.

Dough preparation

Mash the previously boiled potatoes in a bowl with a potato masher. Add the chopped chicken from the Thermomix bowl to the mashed potatoes.

Adding ingredients

Add an egg, salt and pepper to taste to the dough. Then, add 30 g of grated Parmesan cheese and mix well with a spatula.

Breadcrumbs

Add 50 g of breadcrumbs to the dough and mix until a homogeneous mixture is obtained.

Form the meatballs

Grease your hands with a little seed oil and form balls with the dough. Arrange the meatballs on a tray and leave them in the freezer to firm up for at least 30 minutes.

Preparation for frying

Prepare three bowls: one with flour, one with beaten eggs and one with breadcrumbs. Roll the meatballs first in the flour, then in the egg and finally in the breadcrumbs.

Frying the meatballs

In a pan, bring the seed oil to a temperature of 160-170°C. Fry the meatballs until golden brown. Drain them on absorbent paper to remove excess oil.

Serve

Serve the meatballs hot with a pinch of salt.
