Description

These piquant ground meat dumplings in creamy caper sauce are a hearty main course that is especially good in the winter time. With the Thermomix®, the dumplings and the sauce are easy to prepare. The recipe is designed for 4 servings and offers a hearty meal for the whole family.

  • 250 g Ground beef
  • 250 g Ground pork
  • 1 Bread roll
  • 1 große Onion(s)
  • 2 Egg(s)
  • 2 EL Breadcrumbs
  • Salt
  • Pepper
  • Anchovy paste
  • 1 kl. Bund Parsley
  • 1 Liter Meat broth
  • Salt

  • 3 Allspice berries
  • 3 Peppercorns
  • 3 EL Margarine or Butter
  • 2 EL Flour
  • 375 ml Broth
  • 1 kl. Glas Capers
  • 125 ml Cream
  • Lemon juice
  • Sugar
  • Salt
  • Pepper
  • 1 Egg yolk

Chop onion (dumplings)

Put a large onion for the dumplings in the mixing bowl and chop for 3 sec./level 5. Scrape down from the edge with the spatula.

Prepare dumpling dough

Put ground beef, ground pork, soaked bread roll (squeezed out), chopped onion, eggs, breadcrumbs, salt, pepper and anchovy paste into the mixing bowl and mix for 2 min./level 4.

Form dumplings

Form dumplings from the ground meat mixture and set aside.

Prepare broth

20 min/212°F/Speed 1 100

Put meat broth, salt, a large onion, bay leaf, allspice berries and peppercorns in the mixing bowl and cook for 20 min./100°C/level 1.

Cook dumplings

15 min/212°F/Speed 1 100

Add the formed dumplings to the boiling broth and cook for another 15 min./100°C/level 1. Use steamer insert to cook the dumplings gently.

Remove dumplings and collect broth

Carefully remove the dumplings from the mixing bowl and keep warm. Collect 375 ml of the broth and set aside.

Prepare sauce

Put margarine or butter in the mixing bowl and melt for 3 min./100°C/level 1.

Add flour and sauté for 2 min./100°C/level 2.

Add the collected broth, capers, cream, lemon juice, sugar, salt and pepper and cook for 5 min./90°C/level 2. Add egg yolk and stir in for 30 sec./level 3.

Arrange the dumplings with the sauce and garnish with parsley.
