Description

These pineapple rings in crispy puff pastry are a real eye-catcher and taste simply delicious! The combination of the fruity pineapple, the tender puff pastry and the refreshing coconut cream is perfect for warm summer days or as a special dessert for birthdays. I like to make them when I have guests because they are so easy to prepare and still offer something special. The slight acidity of the lime harmonizes wonderfully with the sweetness of the pineapple. If you like it even more exotic, you can refine the coconut cream with a hint of grated tonka bean.

Ingredients (6 ingredients)

  • 1 piece Pineapple
  • 1 piece Organic Lime
  • 70 g Cane Sugar
  • 1.5 Pck. Puff Pastry (275 g, refrigerated section)
  • 300 g Coconut Natural (Yogurt alternative)
  • 2 tbsp Powdered Sugar

Preparation (7 steps)

Prepare Lime Zest

Thermomix® Setting

Wash the lime, dry it and grate the zest. Put the grated zest with 50 g cane sugar into the mixing bowl and mix for 10 sec./speed 8. Transfer and set aside.

Prepare Pineapple

Preheat the oven to 200 °C top/bottom heat (180 °C convection) . Twist out the green from the pineapple, then peel the fruit all around and cut into 6 thick slices. Use a round cookie cutter or a pointed knife to cut or cut out the stalk (4 cm Ø) in the middle.

Prepare Puff Pastry

Unroll the puff pastry and cut lengthwise into 1.5 cm wide strips.

Wrap Pineapple Rings

Sprinkle the pineapple slices with the lime sugar. Then wrap with the puff pastry strips. To do this, start in the middle and wrap the dough slightly overlapping around the ring, carefully threading through the hole again and again. Place rings on a baking sheet lined with baking paper.

Bake Pineapple Rings

Bake the pineapple rings in the preheated oven for 15–20 minutes until golden brown.

Prepare Coconut Cream

In the meantime, squeeze the lime. Put lime juice, coconut natural and 20 g cane sugar into the mixing bowl and mix for 20 sec./speed 3.

Arrange

Let the pineapple rings cool down lukewarm, sprinkle with powdered sugar and serve with the coconut cream.
