Description

This dish of chicken gizzards in sweet sauce is a traditional recipe that I have adapted for the Thermomix®. The gizzards, previously cleaned and sautéed, are cooked in a rich and tasty sauce based on onion, mushrooms, sweet Málaga wine, brandy, mustard and cream. The result is a mellow and flavorful stew, perfect for a special meal or a comforting dinner. The combination of the sweetness of the wine with the spicy touch of the mustard is simply delicious. Ideal to enjoy in autumn or winter!

Ingredients (10 ingredients)

  • 600 g Chicken gizzards
  • 400 g Mushrooms
  • Butter
  • 200 ml Sweet Málaga wine
  • 3 cucharadas Old fashioned mustard
  • 100 ml Brandy
  • 2 piece Onion
  • 400 ml Liquid cream
  • to taste Salt
  • to taste Ground black pepper

Preparation (6 steps)

Clean and sauté the gizzards

Clean the chicken gizzards removing the membranes. In a pan, sauté the seasoned gizzards with a little oil over high heat and reserve.

Chop the onion

Thermomix® Setting

Put the onions in the bowl and chop 3 sec./Stufe 5.

Sauté the onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Add the butter to the bowl and sauté the onion 3 Min./120°C/Stufe 1.

Add the mushrooms

Thermomix® Setting
7 min/248°F/Speed 1 120

Incorporate the mushrooms cut into quarters to the bowl and sauté 7 Min./120°C/Stufe 1.

Reduce the alcohols

Thermomix® Setting
5 min/Varoma/Speed 1 Varoma

Add the sweet Málaga wine and the brandy to the bowl. Program 5 Min./Varoma/Stufe 1 without the measuring cup so that the alcohols evaporate.

Cook the sauce

Thermomix® Setting
60 min/194°F/Speed 1/Linkslauf 90 Reverse

Add the liquid cream, the old fashioned mustard and the sautéed gizzards to the bowl. Cook 60 Min./90°C/Stufe 1/Linkslauf. If necessary, add water or chicken broth during cooking.
