Description

This Vietnamese-inspired chicken noodle soup is a real taste experience! The aromatic broth, refined with star anise, cinnamon and lime, warms from the inside and is wonderfully light. I especially like to make it when it's cold outside or I just need some encouragement. Preparation with the Thermomix® is super easy and quick. The rice ribbon noodles make the soup satiating, while fresh mint, coriander, chili and peanuts provide that special kick. If you like it a little spicier, you can of course add more chili. A dash of fish sauce and soy sauce round off the taste perfectly. Simply delicious!

Ingredients (16 ingredients)

  • 2 clove Garlic
  • 2 piece Shallots
  • 1 piece Star anise
  • 2 piece Cinnamon sticks
  • 0.5 tsp Allspice
  • 8 piece Cardamom pods
  • 1 l Chicken broth
  • 1 piece Organic Lime
  • 2 piece Chicken breast fillets
  • 100 g Rice ribbon noodles
  • 1 Bd. Mint
  • 2 Bd. Coriander
  • 2 piece Chili peppers
  • 4 tbsp Peanuts
  • Fish sauce
  • Soy sauce

Prepare garlic and shallots

Thermomix® Setting

Put 2 cloves of garlic into the mixing bowl and chop for 3 seconds/speed 7. Cut 2 shallots into rings and set aside.

Sauté the spices

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 1 star anise, 2 cinnamon sticks, 0.5 tsp allspice, 8 cardamom pods and the shallot rings to the mixing bowl and sauté for 3 min./120°C/speed 1 without adding fat.

Prepare the broth

Thermomix® Setting
15 min/212°F/Speed 1 100

Add 1 l chicken broth and a wide strip of lime zest (from 1 organic lime) to the mixing bowl and simmer for 15 min./100°C/speed 1. Place 2 chicken breast fillets in the simmering basket and insert.

Remove chicken and strain broth

Remove the simmering basket and set the chicken breast fillets aside, covered. Pour the broth through a sieve into a bowl. Pour the broth back into the mixing bowl.

Cook the noodles

Thermomix® Setting
5 min/212°F/Speed 1 100

Bring the broth to a boil again: 5 min./100°C/speed 1. Add 100 g rice ribbon noodles and switch off the Thermomix®. Let the noodles steep until they are cooked.

Prepare chicken and herbs

Cut the chicken breast fillets into slices. Wash 1 bunch of mint and 2 bunches of coriander, pluck the mint and chop both herbs roughly. Chop 2 chili peppers and 4 tbsp peanuts. Quarter 1 organic lime.

Arrange soup

Divide the rice ribbon noodles into bowls and fill up with the broth. Place the chicken slices on top and decorate with coriander, mint and peanuts. Serve with chopped chili peppers and lime wedges. Season with fish sauce and soy sauce to taste.
