Description

This aromatic beef soup is inspired by Vietnamese Pho and is a real taste experience! The tender beef, fragrant spices and fresh herbs harmonize perfectly. I especially like to make this soup in the winter when it is cold outside. It warms you from the inside out and is also super filling. The preparation is really quick and easy with the Thermomix®. An absolute favourite dish that is always well received by friends and family! If you like it spicier, you can add some chili.

Ingredients (16 ingredients)

  • 200 g Beef fillet
  • 200 g Rice noodles ribbon noodles
  • 2 cm Ginger root
  • 1 piece Onion
  • 1 tsp Cinnamon powder
  • 5 piece Clove
  • 1.5 piece Cardamom seeds
  • 1.3 piece Star anise
  • 0.2 piece Coriander seeds
  • 1.2 l Beef broth
  • 2 piece Spring onion
  • 1 einige Stiele Coriander
  • 1 Handvoll Mung bean sprouts fresh
  • 0.5 piece Lime, juice of it
  • 2 tbsp Soy sauce
  • 1 tbsp Fish sauce

Preparation (7 steps)

Prepare beef

Place the beef fillet in the freezer for about 30 minutes so that it is slightly frozen. This will make it easier to cut into thin slices later. Place the rice ribbon noodles in a bowl and cover with plenty of cold water. Soak for about 20 minutes, then drain and set aside.

Prepare ginger and onion

Peel and roughly chop the ginger root. Peel and quarter the onion. Put both in the mixing bowl.

Chop ginger and onion

Close the mixing bowl and chop the ingredients for 3 sec./level 5.

Sauté ginger and onion

Add the chopped onions and ginger to the mixing bowl with a little oil and sauté for 2 min./120°C/level 1.

Add spices and simmer

Thermomix® Setting
30 min/212°F/Speed 1 100

Add cinnamon, cloves, cardamom seeds, star anise and coriander seeds (optional) to the mixing bowl. Add the beef broth and simmer for 30 min./100°C/level 1.

Strain broth

Pour the broth through a fine sieve into another pot. Clean the mixing bowl.

Season broth

Season the broth with lime juice, soy sauce and fish sauce and bring to a boil.
