Description

This sour roast with potato dumplings and red cabbage, prepared in the Thermomix®, is a hearty main course for festive occasions or the autumn season. The main ingredients are sour roast, potatoes and red cabbage, refined with onions and vinegar. The preparation time is approx. 120 minutes, of which 45 minutes are active working time. The recipe is ideal for a family meal and yields [Anzahl] servings.

  • 1 kg Sour Roast
  • 1 kg Potatoes
  • 1 Stück Red Cabbage
  • 2 Stück Onions
  • 2 EL Oil
  • 2 EL Vinegar
  • 2 EL Sugar
  • 1 TL Salt
  • 0.5 TL Pepper
  • 2 Stück Bay Leaves
  • 100 g Potato Starch
  • 1 Stück Egg
  • 0.25 TL Nutmeg
  • 500 ml Red Wine
  • 2 EL Cranberries
  • 2 Stück Orange Slices
  • Spices
  • Sauce Thickener

Preparation (4 steps)

Prepare Red Cabbage

3 sec/Speed 5, 3 min/248°F/Speed 1, 20 min/212°F/Linkslauf/Speed 1 212°F Reverse

Clean, wash and finely shred the red cabbage. Peel and halve the onions. Place the onions in the mixing bowl and chop for 3 sec/speed 5. Sauté with oil for 3 min/120°C/speed 1. Add red cabbage, vinegar, sugar, salt, pepper and bay leaves and cook for 20 min/100°C/reverse/speed 1.

Prepare Potato Dumplings

25 min/Varoma/Speed 1 Varoma

Peel, wash and quarter the potatoes. Place the potatoes in the simmering basket. Add 500 ml of water to the mixing bowl. Insert the simmering basket and cook for 25 min/Varoma/speed 1. Open carefully - hot steam! Drain the potatoes and press through a potato press. Mix with potato starch, egg, salt and nutmeg and form into dumplings.

Sear and Braise Sour Roast

60 min/212°F/Linkslauf/Speed 1 212°F Reverse

Sear the sour roast in a separate pan from all sides. Place the meat in the mixing bowl. Add red wine, cranberries, orange slices and spices. Braise for 60 min/100°C/reverse/speed 1.

Thicken Sauce

5 min/194°F/Speed 2 194°F

Remove the meat from the mixing bowl and keep warm. Thicken the sauce with sauce thickener according to the package instructions. Simmer for 5 min/90°C/speed 2.
