Description

This One-Pot Vegetable Rice with Chicken Fillet is a simple and hearty main course that is ideal for the whole family. With just a few ingredients and minimal effort, a delicious dish is created that is prepared in the oven. The recipe is easy to prepare and perfect for everyday life.

Ingredients (10 ingredients)

  • 300 g Rice
  • 1 Stück red bell pepper (in strips)
  • 1 Stück Zucchini (in cubes)
  • 3 Stück Carrots (in slices)
  • 1 Stück Leek
  • 400 g Chicken fillet
  • Salt & Pepper
  • 400 ml Coconut milk
  • 400 ml Water
  • 3 EL Curry powder

Preparation (6 steps)

Preheat oven

Preheat oven to 200°C top/bottom heat.

Add rice to the oven wizard

Add 300 g rice to the large oven wizard.

Fry chicken fillet

Season 400 g chicken fillet with salt and pepper and fry in a separate pan.

Distribute vegetables and chicken fillet

Spread 1 red bell pepper (in strips), 1 zucchini (in cubes), 3 carrots (in slices), 1 leek and the 400 g fried chicken fillet seasoned with salt & pepper over it.

Mix liquids and pour over

Stir 400 ml coconut milk, 400 ml water and 3 tbsp curry powder, salt & pepper in the large Nixe and pour over the rice-vegetable-chicken mixture.

Bake

Bake at 200°C top/bottom heat for approx. 45 minutes.
