Ingredients (10 ingredients)

  • 280 ml lukewarm water
  • 10 g fresh yeast
  • 1 TL sugar
  • 500 g flour type 550
  • 1 TL salt
  • 35 ml rapeseed oil
  • sesame seeds (optional)
  • sunflower seeds (optional)
  • wheat middlings (optional)
  • flour for dusting (optional)

Preparation (7 steps)

Dissolve yeast and sugar in water

Add 280 ml lukewarm water, 10 g fresh yeast and 1 tsp sugar to the mixing bowl and mix for 2 min./37°C/speed 2.

Knead the dough

Thermomix® Setting
10 min/Kneading speed

Add 500 g flour type 550, 1 tsp salt and 35 ml rapeseed oil and knead for 10 min./kneading stage.

Let the dough rest

Let the dough rest for at least 1-1.5 hours.

Shape the dough

Cut off the dough, shape it into a ball and let it rest a little. Then flatten, shape into a rectangle and baguette.

Let the dough pieces rest

Let rest for another 20 minutes.

Prepare dough pieces

Ideally, roll in sesame seeds, sunflower seeds or wheat middlings as desired. Otherwise just flour and cut.

Baking

Preheat the oven to 240°C with an empty baking sheet. Slide in the rolls and pour hot water onto the empty baking sheet. After 10 minutes, remove the baking sheet with water and bake for approx. 10-15 minutes.
