Description

This country style rice with rib and chicken is a comforting and flavorful dish, perfect to enjoy with the family. The combination of pork rib and chicken, along with the tomato and onion sofrito, creates a delicious base for the rice. It is an ideal dish for cool days, when you crave something substantial and homemade. Although it requires a bit of time, the result is worth it. You can adjust the amount of spiciness to your liking. Go ahead and prepare it, you will love it!

Ingredients (11 ingredients)

  • 350 gramos cooked white rice
  • 200 gramos pork rib chopped in small pieces
  • 10 unidades chicken drumettes
  • 4 unidades ripe tomatoes
  • 3 ramas scallion or green onion
  • 1 cucharada fresh parsley
  • 1 cucharada mustard
  • 3 dientes garlic
  • Olive oil
  • Salt
  • Pepper

Preparation (5 steps)

Preparation of the meats

Preheat the oven to 160°C. In a baking dish, place the chicken drumettes and pork ribs. Add 2 tbsp of olive oil, 3 finely chopped garlic cloves, salt and pepper to taste. Bake for 30 minutes.

Preparation of the sofrito

Wash and finely chop 3 branches of scallion and 4 ripe tomatoes. Place in the Thermomix bowl along with a little olive oil and sauté for 10 minutes at 120°C on speed 1.

Incorporation of the meats to the sofrito

2 min/212°F/Linkslauf Speed 2 100 Reverse

Once the meats are ready, add them to the Thermomix bowl with the sofrito. Mix well for 2 minutes at 100°C on speed 2 with left turn.

Add the rice and finish cooking

3 min/194°F/Linkslauf Speed 2 90 Reverse

Add 350 grams of cooked white rice, 1 tbsp of chopped fresh parsley, 1 tbsp of mustard, salt and pepper to taste to the Thermomix bowl. Mix well for 3 minutes at 90°C on speed 2 with left turn to integrate all the ingredients. If the preparation has excess fat, carefully remove it.

Serve

Serve the country style rice, adding to each plate a little of each of the meats. Sprinkle finely chopped parsley.
