Description

These orange almond twice-baked cookies, also known as biscotti, are a delightful treat, especially during the holiday season.   • 2.25 cups all-purpose flour
  • 1.25 cups white sugar
  • 2 tsp baking powder
  • 1 pinch salt
  • 0.5 cups sliced almonds
  • 1 tbsp orange zest
  • 3 piece egg, beaten
  • 1 tbsp vegetable oil
  • 0.25 tsp almond extract

Add 2 ¼ cups all-purpose flour, 1 ¼ cups white sugar, 2 teaspoons baking powder, 1 pinch salt, ½ cup sliced almonds, and 1 tablespoon orange zest to the Thermomix bowl. Mix for 10 Sec./Stufe 3 to combine.

Add wet ingredients and form dough

Add 3 beaten eggs, 1 tablespoon vegetable oil, and ¼ teaspoon almond extract to the Thermomix bowl. Mix for 30 Sec./Stufe 4 until the mixture forms a ball. Use the spatula to help combine if needed.

Shape the dough

Remove the dough from the Thermomix bowl and divide it into 2 equal pieces. On a lightly floured surface, roll each piece into a log approximately 8 inches long. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a baking sheet.

First bake

Place the logs on the prepared baking sheet and flatten them to about 3/4-inch thick. Bake in the preheated oven for 20 to 25 minutes.

Slice and second bake

Cool the logs slightly, then remove them from the baking sheet. Using a serrated knife, slice the logs diagonally into 1/2-inch slices. Place the cookies on their sides back onto the baking sheet.

Final bake

Bake the cookies for 10 to 15 more minutes, turning them over after half of the time. The finished cookies should be hard and crunchy.
