Description

This Thermomix® recipe for shortcrust pastry cookies with flour, margarine, egg, icing sugar and vanilla sugar is a simple dessert for the Christmas season. Preparation in the Thermomix® takes about 35 minutes and yields approximately 20 cookies. Ideal as finger food for winter occasions or as a sweet treat for the whole family. Optionally, the cookies can be decorated with an icing made of icing sugar and food coloring.

Ingredients (8 ingredients)

300 g Flour
1 Päckchen Vanilla sugar
100 g Icing sugar
1 Stück Egg (size M)
200 g Margarine
nach Geschmack Lemon juice
Icing sugar (for icing)
Food coloring (optional)

Preparation (6 steps)

Mix dry ingredients

Add 300 g flour, 1 packet vanilla sugar and 100 g icing sugar to the mixing bowl and mix for 10 sec/speed 4.

Prepare dough

Separate 1 egg (size M). Add only the egg yolk, 200 g margarine in small pieces and the flour-sugar mixture to the mixing bowl and knead for 2 min/kneading level to a smooth dough.

Preheat oven

Preheat the oven to 180 °C top/bottom heat (convection: 160 °C). Line a baking tray with baking paper.

Cut out and bake cookies

Roll out the dough on a floured work surface to a thickness of 3-4 mm. Cut out cookies with a cookie cutter and place on the baking tray lined with baking paper. Bake the cookies in the preheated oven for approx. 10-15 minutes until light golden brown.

Prepare icing

For the icing, stir 1-2 tbsp lemon juice with enough icing sugar in a bowl until a creamy mass is formed. Color with food coloring as desired.

Decorate cookies

Decorate the cooled cookies with the icing as desired.
