Description

Shortcrust pastry cookies with jelly are a simple Thermomix® recipe for Christmas cookies. The main ingredients are egg white, margarine, powdered sugar, vanilla sugar and flour. In about 53 minutes, about 40 servings of finger food or dessert are created. The recipe is particularly suitable for preparation with the family in winter.

Ingredients (6 ingredients)

  • 1 Stk. Egg (size M, only egg white)
  • 200 g Margarine
  • 125 g Powdered sugar
  • 1 Päckchen Vanilla sugar
  • 390 g Flour
  • 225 g Fruit jelly

Preparation (6 steps)

Prepare dough

Thermomix® Setting
2 min/Speed 4

Put the egg white in the mixing bowl. Add 200 g margarine, 125 g powdered sugar and 1 packet of vanilla sugar and stir creamy for 2 min./speed 4.

Add flour and knead dough

Thermomix® Setting
2 min/Kneading speed

Add 390 g flour and process into a dough for 2 min./kneading stage. Remove the dough from the mixing bowl and form a ball with floured hands.

Roll out dough and cut out cookies

Roll out the dough thinly to 2-3 mm on a floured work surface. Cut out cookies without a hole with cookie cutters and place on baking sheets lined with baking paper. Cut out just as many cookies with a hole and place them on baking sheets as well.

Bake cookies

Preheat the oven to 200 °C (convection: 180 °C). Bake the cookies without a hole in the preheated oven for about 6-8 minutes until light yellow. Bake the cookies with a hole for a little shorter time. Then let cool.

Heat jelly

Thermomix® Setting
2 min/122°F/Speed 2 50

Put 225 g fruit jelly in the mixing bowl and heat for 2 min./50°C/speed 2 and stir until smooth.

Assemble cookies

Spread the warmed jelly on the cookies without a hole. Dust the cookies with a hole with powdered sugar. Put the cookies together and let them dry.
