Description

These whole wheat rustic cookies are perfect for a healthy and tasty breakfast or to accompany a cup of tea in the afternoon. Prepared with buckwheat flour and whole wheat flour, they have a rustic flavor and a crumbly texture that makes them irresistible. The addition of a vanilla flavoring gives a touch of delicate sweetness. They are quick and easy to prepare with the Thermomix®, ideal for those who love simple and genuine flavors. Perfect to share with friends and family!

Ingredients (7 ingredients)

  • 200 g buckwheat flour
  • 300 g whole wheat flour
  • 130 g milk
  • 100 g sunflower seed oil
  • 120 g cane sugar
  • 1 packet instant yeast for cookies
  • 1 fialetta vanilla flavoring

Preparation (9 steps)

Flours in the bowl

Pour 200 g of buckwheat flour and 300 g of whole wheat flour into the Thermomix bowl.

Mix the flours

Mix the flours for 10 Sec./level 3 to blend the dry ingredients well.

Add the liquid ingredients

Add 130 g of milk, 100 g of sunflower seed oil, 120 g of cane sugar, 1 sachet of instant yeast for cookies and 1 vial of vanilla flavoring in the bowl.

Knead

Thermomix® Setting
2 min/Kneading speed

Knead for 2 Min./kneading level until you get a homogeneous dough. If the dough is too sticky, add a little flour.

Roll out the dough

Transfer the dough to a lightly floured work surface and roll it out with a rolling pin until you get a thin sheet of about 3 mm.

Shape the cookies

With the help of a cookie cutter, cut out the cookies. Use the tip of a pastry bag to make the central hole in the cookies.

Arrange the cookies on the baking sheet

Transfer the cookies to a baking sheet lined with baking paper.

Brush and decorate

Brush the surface of the cookies with milk and sprinkle them with cane sugar.

Bake in oven

Bake in a preheated static oven at 180°C for about 20 minutes, or in a fan oven at 170°C for about 20 minutes. Once cooked, let cool completely.
