Description

This Thermomix® recipe for spice cookies with almonds is a Christmas classic. The main ingredients are butter, brown sugar, egg, lemon, and cinnamon. The preparation takes a total of 220 minutes, with a pure working time of about 30 minutes. The recipe yields about 60 cookies and is perfect as finger food or dessert during the winter season. Ingredients (12 ingredients)

  • 150 g soft butter
  • 125 g brown sugar
  • 1 egg (room temperature)
  • 1 organic lemon
  • 1 TL cinnamon
  • 0.5 TL ground cloves
  • 0.5 TL ground cardamom
  • 1 Prise(n) salt
  • 60 g ground almonds
  • 300 g wheat flour Type 405
  • 1 TL baking powder
  • 30 g almond flakes

Preparation (7 steps)

Mix butter, sugar and egg

Put 150 g soft butter, 125 g brown sugar and 1 egg (room temperature) into the mixing bowl and mix for 2 min./speed 4.

Grate lemon zest

Wash 1 organic lemon with hot water, dry it and grate 1 tsp of zest. Set the grated lemon zest aside.

Add spices and almonds

Add the grated lemon zest, 1 tsp cinnamon, 0.5 tsp ground cloves, 0.5 tsp ground cardamom and 1 pinch of salt as well as 60 g ground almonds to the mixing bowl and stir in for 30 sec./speed 3.

Knead in flour and baking powder

Thermomix® Setting
2 min/keine/Kneading speed

Add 300 g wheat flour type 405 and 1 tsp baking powder to the mixing bowl and knead for 2 min./knead setting to form a dough.

Chill the dough

Form the dough into a ball, wrap in cling film and refrigerate for 3-4 hours.

Roll out and cut out cookies

Roll out the dough thinly on a lightly floured work surface. Cut out cookies with cookie cutters and decorate them with 30 g of almond flakes.

Bake cookies

Place the cookies on a baking sheet lined with baking paper and bake in a preheated oven at 180 °C top and bottom heat for about 15 minutes.
