Description

These walnut-shaped cookies with a luscious caramel filling are a delightful treat, perfect for sharing during the holidays or any special occasion. I've been making these for years, and they always disappear quickly! The buttery, slightly crumbly cookies pair beautifully with the rich, sweet caramel. The dough needs some chilling time, but the effort is well worth it. They're especially lovely served with a cup of coffee or tea. These cookies are a wonderful addition to any dessert platter and are sure to impress your guests.

Ingredients (7 ingredients)

  • 0.5 cup butter, softened
  • 0.33333333333333 cup white sugar
  • 1 piece egg, lightly beaten
  • 0.5 tsp vanilla extract
  • 1 cup all-purpose flour
  • 0.25 tsp salt
  • 13.4 ounce dulce de leche

Preparation (8 steps)

Cream butter and sugar

Place ½ cup softened butter and ⅓ cup white sugar into the mixing bowl. Mix for 20 Sec./Stufe 4 until creamy.

Add egg and vanilla

Add 1 lightly beaten egg and ½ teaspoon vanilla extract to the mixing bowl. Mix for 10 Sec./Stufe 3 until combined.

Incorporate flour and salt

Thermomix® Setting
20 sec/Speed 3

Add 1 cup all-purpose flour and ¼ teaspoon salt to the mixing bowl. Mix for 20 Sec./Stufe 3 until just incorporated. Be careful not to overmix.

Chill the dough

Remove the dough from the mixing bowl, cover with plastic wrap, and refrigerate for 30 to 60 minutes, or up to overnight.

Preheat oven and prepare molds

Preheat the oven to 375 degrees F (190 degrees C).

Shape the cookies

Press about 1 teaspoonful of the chilled dough into the bottom and up the sides of each walnut-shaped mold. Place the molds on a baking sheet.

Bake the cookies

Bake in the preheated oven until browned around the edges, 12 to 18 minutes. Cool for a few minutes. Lightly tap on the bottom of the mold to pop out the cookies. Let cool until easily handled.

Fill and assemble

Spoon some dulce de leche onto the bottom of each cookie and sandwich the halves together.
