Diese veganen Mandel-Schoko-Cookies sind ein absoluter Genuss! Ich backe sie besonders gerne zur Weihnachtszeit, aber eigentlich passen sie zu jeder Gelegenheit. Die Kombination aus Mandelbutter und dunkler Schokolade ist einfach unwiderstehlich. Durch die Banane werden die Cookies schön saftig und bekommen eine leichte Süße. Sie sind schnell zubereitet und schmecken sowohl warm als auch kalt köstlich. Wer mag, kann noch ein paar Mandeln als Topping hinzufügen. Ein tolles Rezept für alle, die vegane Leckereien lieben!

Ingredients (13 ingredients)

  • 1 cup almond butter
  • 1 cup packed brown sugar
  • 0.67 cup shortening
  • 0.33 cup vegan margarine
  • 1 piece overripe banana, mashed
  • 2.5 cup all-purpose flour
  • 1.5 tsp baking soda
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 tbsp water, or as needed (Optional)
  • 3 ounce dark chocolate, chopped
  • 0.5 cup white sugar
  • 36 piece whole blanched almonds (Optional)

Preparation (5 steps)

Almond butter mixture

Thermomix® Setting
30 sec/Speed 4

Add almond butter, brown sugar, shortening, and margarine to the mixing bowl. Mix for 30 sec./Stufe 4 until creamy. Use the spatula to scrape down the sides of the bowl.

Add banana

Thermomix® Setting
10 sec/Speed 3

Add the mashed banana to the mixing bowl. Mix for 10 sec./Stufe 3 until combined. Use the spatula to scrape down the sides of the bowl.

Combine dry ingredients

Add flour, baking soda, baking powder, and salt to the mixing bowl. Mix for 20 sec./Stufe 3 until combined. Use the spatula to scrape down the sides of the bowl.

Add water and chocolate

If the dough appears too thick, add water and mix for 5 sec./Stufe 2. Add the chopped dark chocolate and mix for 10 sec./Linkslauf Stufe 2 to incorporate.

Form and bake cookies

Preheat oven to 375 degrees F (190 degrees C). Pour white sugar onto a shallow dish. Form dough into 1-inch balls and roll in sugar. Arrange 2 inches apart on baking sheets; flatten with a fork. Top each cookie with an almond, if desired. Bake in the preheated oven until lightly browned, about 10 minutes. Cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
