Description

This braised beef with carrots and red wine is a comforting and flavorful dish, perfect for autumn and winter evenings. I often prepare it for family meals, as it is easy to make and everyone likes it. The meat, cut into cubes, becomes incredibly tender after several hours of simmering in a rich and fragrant sauce. The bouquet garni and carrots add a touch of freshness and sweetness. Feel free to use a quality red wine for an even more pronounced taste. This dish is even better reheated the next day!

Ingredients (8 ingredients)

  • 800 g fondue beef for bourguignon
  • 1 bouteille red wine
  • 100 g butter
  • 1 bouquet bouquet garni
  • 5 piece onions
  • 5 piece carrots
  • to taste Salt or fine salt
  • to taste Pepper

Preparation (7 steps)

Preparation of the meat and vegetables

Cut the beef into cubes of about 3 cm on each side, removing the large pieces of fat. Peel and cut the onions into pieces. Peel and cut the carrots into slices.

Chop the onions

Put the chopped onions into the Thermomix bowl and chop for 3 Sek./Stufe 5.

Sauté the onions

Add 40 g of butter to the Thermomix bowl and sauté the chopped onions for 3 Min./120°C/Stufe 1.

Cooking the meat (in the pan)

Sauté the cubed meat in a pan with the rest of the butter (60 g), in several batches, until all the pieces are cooked. Do not be afraid to add butter between each batch. Set aside the meat.

Deglaze the pan

Deglaze the pan with water or red wine and boil, scraping to recover the juices. Salt, pepper.

Simmer the beef

3 heures/212°F/Speed 1/Linkslauf 100 Reverse

In the Thermomix bowl, add the cooked meat, sautéed onions, the pan juice, the bouquet garni, the sliced carrots, the salt, the pepper and cover everything with part of the red wine. Program 3 hours/100°C/Stufe 1/Linkslauf.

Second simmering

Thermomix® Setting
2 heures/212°F/Speed 1/Linkslauf 100 Reverse

The next day, add the rest of the red wine to the Thermomix bowl and simmer for at least 2 hours/100°C/Stufe 1/Linkslauf, several times, add wine or water if necessary.
