Description

This Sichuan noodle bowl with smoked mackerel is a flavor explosion! The combination of the spicy Sichuan peppercorns, savory soy sauce, and smoky mackerel is simply divine. It's a quick and easy meal that's perfect for a weeknight dinner. I love how the pak choi and broccoli add a fresh, vibrant touch. Feel free to adjust the amount of chili flakes to your liking. This recipe is a great way to enjoy a healthy and delicious meal in under 30 minutes. It's definitely a new favorite in my kitchen!

Ingredients (13 ingredients)

  • 1 tsp Sichuan peppercorns
  • 2 tbsp sesame oil
  • 2 tbsp tahini
  • 0.5 tsp Chinese five-spice
  • 2 clove garlic
  • 2 tsp caster sugar
  • 1 tbsp reduced-salt soy sauce
  • 1 tbsp rice vinegar
  • 0.5 tsp chilli flakes
  • 140 g medium egg noodles
  • 2 piece pak choi
  • 100 g purple sprouting broccoli
  • 2 piece smoked, peppered mackerel fillets, skin removed

Preparation (4 steps)

Toast and Crush Sichuan Peppercorns

Thermomix® Setting
2 min/248°F/Speed 1 120

Place the Sichuan peppercorns in the Thermomix bowl and toast for 2 minutes/120°C/Stufe 1. Then, crush lightly using a pestle and mortar or the end of a rolling pin and a sturdy bowl.

Prepare the Sauce

10 sec/Speed 3

Add the toasted and crushed Sichuan peppercorns, sesame oil, tahini, Chinese five-spice, garlic cloves, sugar, reduced-salt soy sauce, rice vinegar, and chilli flakes to the Thermomix bowl. Mix for 10 seconds/Stufe 3.

Cook Noodles and Vegetables

Add the medium egg noodles to the Thermomix bowl, pour over boiling water and cook following pack instructions. Add the pak choi and purple sprouting broccoli for the final 2 minutes. Drain, reserving a mugful of the cooking water.

Combine and Serve

10 sec/Speed 2/Linkslauf Reverse

Mix the tahini sauce into the noodles and vegetables in the Thermomix bowl, add a decent splash of the reserved cooking water and give it a good stir to coat for 10 seconds/Stufe 2/Linkslauf. Flake in the smoked mackerel and gently fold in, season to taste and serve.
