These oat and peanut butter energy balls are a fantastic snack for any time of day! I've been making these for years, and they're always a hit. They're packed with wholesome ingredients like rolled oats, flax seed, and peanut butter, making them a healthy and satisfying treat. The touch of honey and vanilla extract adds just the right amount of sweetness. These are perfect for a quick breakfast, a post-workout snack, or a healthy dessert. They're also naturally gluten-free, making them a great option for those with dietary restrictions. Plus, they're so easy to make with the Thermomix®!

Ingredients (6 ingredients)

  • 1 cup rolled oats
  • 0.5 cup miniature semisweet chocolate chips
  • 0.5 cup ground flax seed
  • 0.5 cup crunchy peanut butter
  • 0.33333333333333 cup honey
  • 1 tsp vanilla extract

Preparation (5 steps)

Combine Dry Ingredients

5 sec/Speed 4

Add 1 cup rolled oats and ½ cup ground flax seed to the mixing bowl. Mix for 5 Sec./Stufe 4 to combine.

Add Wet Ingredients

Thermomix® Setting
20 sec/Speed 3

Add ½ cup crunchy peanut butter, ⅓ cup honey, and 1 tsp vanilla extract to the mixing bowl. Mix for 20 Sec./Stufe 3 until well combined, using the spatula to scrape down the sides of the bowl if needed.

Add Chocolate Chips

5 sec/Speed 2/Linkslauf Reverse

Add ½ cup miniature semisweet chocolate chips to the mixing bowl. Mix for 5 Sec./Stufe 2/Linkslauf to gently incorporate the chocolate chips.

Shape into Balls and Freeze

Remove the dough from the mixing bowl. Roll the dough into 24 equal-sized balls using your hands. Arrange the balls on a baking sheet lined with parchment paper and freeze for at least 1 hour, or until set.

Serve

Serve the energy balls directly from the freezer or refrigerator. Store any leftovers in an airtight container in the freezer for up to 2 weeks.
